Shredded zucchini adds moisture and nutrients to these delicious protein brownies, making them a wholesome treat you can feel good about. With 16 grams of protein per serving, they’re perfect for supporting muscle recovery and keeping you energized throughout the day. The tender, fudgy texture combined with a subtle hint of sweetness creates a satisfying bite that melts in your mouth, while the zucchini imparts a gentle earthiness that balances the richness of the chocolate. These brownies are ideal as a post-workout snack, a healthy dessert, or even meal prep for busy weekdays; they stay moist and flavorful when stored in the fridge. They’re naturally gluten-free if you use gluten-free oats or flour, and vegan variations can be made with plant-based protein powders and egg substitutes. For best results, be sure to finely shred the zucchini and squeeze out excess moisture to prevent sogginess. A dash of sea salt or a sprinkle of cinnamon can elevate the flavor further, making these brownies irresistibly delicious while packing a serious nutritional punch. Let the brownies cool before slicing.
TROUBLESHOOTING
My brownies are too dry
Try adding 1-2 tablespoons more liquid (milk, yogurt, or egg whites). Also ensure you're not over-measuring the protein powder - use the scoop and level method.
They didn't rise properly
Check your baking powder is fresh (test by adding to hot water - it should bubble vigorously). Also, don't overmix the batter as this can deflate the air bubbles.
The texture is rubbery
This usually means too much protein powder or overbaking. Reduce baking time by 2-3 minutes and check doneness with a toothpick.
